Producers of Premium Quality Varietal Olive Oils
Camp d'Estrelles (Catalan for "Field of Stars") is a family smallholding based in the Tarragona Province of Catalunya, Spain, producing premium quality, estate bottled, single varietal Spanish extra virgin olive oils. Three quarters of our production is from the variety Empeltre (known locally as Terra Alta), and a quarter from the ancient variety Farga. They produce a light, golden extra virgin olive oil of fine quality with a gentle pepperiness coupled with the hint of almonds. Both contain medium levels of phenols, which means they carry a good shelf life.
All our olive oil is produced with minimal interventionism. The trees are pruned in a pendulous fashion to aid hand harvesting. The olives are hand-picked to minimise bruising, processed at the village (Asco) mill using a Pieralisi press and cold stabilised. No fining or filtration takes place, which has the potential to strip much of the flavour of the oil. The olive oil is then cold stored to allow the sediment to settle and finally it is racked off the pulp debris (as in fine wine) and stored in airtight containers until bottling. All aspects in the production of our extra virgin olive oil, from pruning to pressing, is always handled with meticulous care and attention, ensuring that the final product is of the highest possible standard.
Established over many years, the estate has a mixture of centenarian trees and younger fifty-year-old trees. This passage of time has allowed for the development of extensive root systems, tapping into the varied soil structures, capturing the trace element and mineral resources and thus creating unique nuances within the olive oil.
On several of the low terraces replanting has taken place, with forty-seven Farga olive saplings and seventeen Empeltre olive saplings. Because we dry-farm (ie. without irrigation), all plantings are on a 10m x 10m planting density. The terraces to the rear of the house, which are home to over three hundred almond trees, are all in production, although all the produce is sold locally.
